Pine & pepper
Resinous juniper and fresh spruce lift first, with a cool, green forest edge and a hint of citrus oil.
Palate
Dry & herbal
Bold and dry. Wild thyme and coriander build a savory, spiced core, balanced by a soft floral roundness.
Finish
Warm & wild
Long and warming, with lingering pine and a faint orchard sweetness from native wild pear.
Process
One pot.
The heart only.
We run a single copper pot still slow and low, and keep only the heart of the run, discarding the harsh heads and dull tails. It is wasteful. It is also the only way we know to make something this clean.
Cut to strength with limestone spring water. Numbered and sealed by hand.
